Dahl

Ingredients

  • 1 onion (all cut into small cubes)
  • 1 carrot
  • 2 large cauliflower florets
  • 1/2 zucchini
  • 1 large potato
  • 1/4 red capsicum
  • 1/4 cup peas
  • 2 cloves garlic, finely chopped
  • 1 tablespoon fresh ginger, finely chopped
  • 4 cups water, or vegetable broth
  • 1 cup dried red lentils, rinsed and picked over
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt, or to taste
  • 2 tablespoons tomato paste (or 400g tin of tomatoes)

Method

  • Heat up oil and add carrot and onion (Cook until satisfied)
  • Add Garlic
  • Add Veggies in order you think best.(Harder before softer)
  • Add Either tomotoe paste or Tin Tomotoes, Cook for a while until starting to stick
  • Add stock.
  • Cook for further 20min until dahl is soft.
  • Stir in coconut milk
